Chicken Soup Semarang (Soto Ayam Kampung Semarang)

Recipe:
1 whole chicken
2 lt of water
1 tsp salt
4 sheets of orange leaves in tatters
3 cm galangal, crushed
3 cm ginger, crushed
3 tbsp oil
2 tablespoons soy sauce
1 tsp salt
2 stalk of green onion cut into 2 cm
3 tablespoons red onion, fry, knead
2 tbsp garlic, fry, knead
1 tablespoon finely shredded seldri
100 gr glass noodles, hot soak, drain
100 gr bean sprouts short, clear

Puree:
8 pcs shallots
5 cloves of garlic
3 cm ginger
1 tsp pepper
1 tsp nutmeg

Complement:
fried chips
Red chili sauce
2 pcs lime

How to make:
1. Boil chicken, water, greetings, lime leaves, galangal, ginger and lemongrass on top
medium heat until boiling and chicken is tender. Remove the chicken, strain broth and shredded-shredded chicken, set aside.
2. Heat oil, saute ground spices until fragrant, pour the broth, soy sauce and salt, bring to a boil.
3. Enter the shredded chicken, scallions, fried shallots, fried garlic, tomatoes and leaf seldri, bring to a boil again.
4. Presentation: set glass noodles, bean sprouts, in a serving bowl, pour the chicken broth and serve with complementary materials.


INDONESIAN VERSION

Resep:
1 ekor ayam kampung
2 lt air
1 sdt garam
4 lembar daun jeruk sobek-sobek
3 cm lengkuas, memarkan
3 cm jahe, memarkan
3 sdm minyak
2 sdm kecap manis
1 sdt garam
2 btg daun bawang potong 2 cm
3 sdm bawang merah, goreng, remas-remas
2 sdm bawang putih, goreng, remas-remas
1 sdm seldri iris halus
100 gr soun, rendam air panas, tiriskan
100 gr tauge pendek, bersihkan
Haluskan:
8 bh bawang merah
5 siung bawang putih
3 cm jahe
1 sdt lada
1 sdt pala
Pelengkap:
Emping goreng
Sambal cabai rawit merah
2 bh jeruk nipis
Cara membuat:
1. Rebus ayam, air, salam, daun jeruk, lengkuas, jahe dan serai di atas
api sedang hingga mendidih dan ayam empuk. Angkat ayam, saring kaldunya dan suwir-suwir ayam, sisihkan.
2. Panaskan minyak, tumis bumbu halus hingga harum, tuang kaldu, kecap dan garam, didihkan.
3. Masukkan ayam suwir, daun bawang, bawang merah goreng, bawang putih goreng, tomat dan daun seldri, didihkan kembali.
4. Penyajian: atur soun, tauge, dalam mangkuk saji, tuangkan kuah ayam, sajikan dengan bahan pelengkap.
